I love the Philippine mangoes. The riped ones are sweet and the unriped ones are tangy. Though, they almost look like the mangoes of the other countries, I just realized that the mangoes from the Philippines tastes better. I just realized this when I was on vacation last year and had riped mangoes almost every other day because it was mango season.
The variety (Philippine mango) is reputed internationally due to its sweetness and exotic taste. The mango variety was listed as the sweetest in the world by the 1995 edition of the Guinness Book of World Records.
The mangoes we have abroad, here in the mid-east specifically, are just way too far from what we have in the Philippines. The ones here sometimes have an after taste. Some people say mangoes bought here tastes like medicine (lasang gamot). Another is that the riped ones, when eaten in chunks make your throat itchy. Unbearably itchy.
So, if you have accidentally bought a mango that is not favorable to eat, you can use it to make this cucumber mango salad. The mangoes will be smaller in size and the acid from the lemon helps cut the medicine taste from the mango. Plus, your throat won’t itch. 🙂
My husband made this so we can use the mangoes.
Cucumber mango salad recipe:
2-3 pcs. of medium cucumber
1 riped mango
1 medium sized lemon
Dash of salt
*1 tsp. of sugar (optional. You may add this if you don’t want the salad to be too sour)
-Wash the cucumbers and mango.
-Cut the mangoes into small cubes.
-Cut the cucumber into half and slice them into thin strips. You may also cube them if you like.
-In a small bowl, squeeze the lemon (remove the seeds) then add salt, pepper, and sugar.
-Combine the cucumber, mango, and dressing.
*Adjust according to your taste.
